Via Hyperallergic’s required reading, we discover that though overshadowed by other culinary influences presently that Portugal has played an outsized role in world gastronomy. Dishes that we consider a tradition staple of Japanese dining—fried vegetables or tempura (ๅคฉใทใ)—was introduced by Portuguese traders who had a presence in Japan for about a century until being banished in 1639 for proselytizing, the ruling shogunate believing that Christianity was a threat to a stable society.
The recipe adapted from peixnhos da horta (little fish of the garden) for battered and fried green beans came to be known as tempura is etymologically tied to Christianity, being a Lenten substitute for a filling meal for those too poor to afford actual fish as a break from fasting, coming from the Latin tempora which indicated the time for abstaining. Improvising Portuguese canteen operators also whipped up a spicy, wine marinated pork dish called carne de vinha d’alhos, which in the former colonial outpost of Goa in India informed the reimport vindaloo. alpha predator
Via the always brilliant Nag on the Lake, we learn of the successful trial run of a robotic monster to mitigate human and wildlife competition for resources that’s a sort of next generation of scarecrow. Orchard-keepers and rice farmers in Japan can now summon the juggernaut Super Monster Wolf as a means of keeping wild boars out of their chestnut groves and rice paddies without resorting to more lethal countermeasures.
Its prowling and howls are adaptive so its quarry does not grow inured to its presence and the terrifying turns into the laughable. Having had a close-call with one of these hulking beasts (not pictured—this one was relatively tame and confined to a wild park), we wonder if Super Monster Wolf could be persuaded to patrol different beats besides safeguarding crops in order to keep animals away from busy roads and out of harm’s way. US National Public Radio’s European correspondent Eleanor Beardsley reports on some refreshingly positive follow-up on the 2016 legislation that outlaws systemic food waste in France—leveraging hefty fines against grocery stores that throw away edible food.
Without taking into account the negative impacts of agriculture to include indignity to animals, habitat loss, pesticide and intensive water-use, humans throw away about a third of what’s raised or grown, with developed nations disposing of the majority of their food at the final stage when the most time and effort has been invested in it. Not only are struggling families benefited from higher quality and quantity donations to food-banks and other charities, supply-chain-management is also improved with the elimination of the stipulation that suppliers deliver amounts at fixed thresholds and obligating merchants to buy more than they can sell in a timely factor, reducing emissions due not only to surplus transportation but also for food-waste kept from land-fills (as food bio-degrades, it produces methane) and not artificially subsidies over-production. smitten kitchen
I had been eagerly anticipating trying a simple recipe for an avocado and cucumber salad first recommended by Nag on the Lake for a couple of weeks now but found it was well worth the wait and ought to be incorporated into any meal schedule. My presentation is not the loveliest but the taste and the texture are worth pursuing. Taking a few liberties with the ingredients, I took:
- 1 large cucumber (Gurke), washed and chopped
- A small bunch of scallions (Lauchzweibel) diced
- 1 Avocado (I should have gone bigger), pitted and scooped out
- For the dressing, 2 tablespoons of Salad Yogurt—the original recipe called for Mayonnaise but I imagine that it or Remoulade would work equally well
- Spice it up with cayenne and black pepper

Third in colourful metaphors in the English language and bested only by the topics of sex and money, the term alcohol itself (from the Arabic alchemy word for the coal, any powder won through evaporation and distillation) is a relative new borrowing, compared to the numerous epithets of drinking culture that reach back thousands of years.
Whilst for ages more potent drinks enjoyed a better safety record than plain water—given the fact that there no treatment facilities and the benefits of boiling water were perhaps unknown to most hydropots, as the brave souls were called, tosspots—for those with no reluctance to throw back a beer (or several) might have to deal with a different sort of post-revelry regret in the form of a hangover. Precautions, remedies and cure-alls have equally old provenance, with the gem stone amethyst (from the Greek for sober) believed to be a magical charm to stave off intoxication. A few other borrowings of the language and not mineral variety include lampooning—from the French Lampons! for let us drink (compare to the Michelin mascot Bibendum from Horace’s Odes Nunc est bibendum, or rather It’s Booze Time!) which a night spend carousing—from the German invocation gar aus trinken to empty the glass—might facilitate, either in person or increasingly online. As a spinoff for a project that they did for a particular client, an Australian design studio and local confectionary experts collaborated to create gourmet chocolate stair-step wedges in exotic flavours that are paired with a complementary piece to form a cube, Universal Favourites, that’s not only pleasing to the palette but aesthetically as well, since food ought to be photogenic and look too good to part with casually.

While we hope for our American readership that the family gathering presented an opportunity for constructive political dialogue and not abject avoidance of potentially incendiary topics that no matter how dicey do need airing, there was a time when the movable feast of Thanksgiving was itself an even more a divisive, partisan issue, as Atlas Obscura recalls.
With the US still recovering from the economic downturn of the Great Depression, president Franklin Delano Roosevelt conceded to the pressure of retailors, fearing a shorter Christmas shopping season had the tradition of proclaiming the last Thursday of the month of November to be a national day of thanksgiving been kept, and changed the date of the holiday. FDR’s decision caused disruption, as expected, and drew ire that followed party lines with twenty-two states celebrating the on the new date and twenty-three on the old date that year. The move garnered the president a lot of criticism with some claiming it represented an abuse of executive powers and earned sobriquets like the “New Deal Thanksgiving” or “Franksgiving,” an affront to the “Republican Thanksgiving” as Abraham Lincoln had intended it, with some states still observing the old style date until the mid-1950s. As with most legislation, it took an act of congress to settle matters and align the whole country’s calendars.

locavore or on the growth of plants in closely glazed cases
Writing for the Atlantic, Jen Maylack invites us to reflect on how a seemingly elementary idea, the not-so distant ancestor of the modern terrarium, changed the course of the world—heralding in not only global trade but also the spread of Western colonialism and the spread of invasive species.
As basic as the principle underlying it is the Wardian Case was so revolutionary as to be the realisation of all the past endeavours of the alchemists—achieving a hermetic seal, that is, staving off the advance of time that defines all us mortals—with just as far reaching repercussions albeit in an unexpected form: a self-regulating environment that would capture in microcosm a plant’s natural habitat and perpetuate it at least long enough for it to become a transplant in a botanical garden or another area that afforded similar climes and growing conditions. The invention of the portable greenhouse came about just in 1829 when a physician and garden enthusiast (with a special obsession for ferns), one Dr Nathaniel Bagshaw Ward, lamented how London’s polluted air was killing off his prized collection and learned through trial and error that if prepared correctly that the right moisture levels could be maintained within a closed-system, by extension enabling the possibility of long-distance shipping incrementally to our present world of year-around availability fresh fruits and vegetables, regardless of one’s location—which of course have collateral environmental and geopolitical costs associated with them.

shake ‘n bake (and I helped)
While I’d not want to risk alienating potential future sponsors, the profusion of mail-order meal services out there sort of baffles me—and I suppose in good faith I couldn’t accept their support since there’s no way such jostling and shuttling about staple ingredients repackaged could be ecologically excused—and I wonder what the allure is exactly. I remember reading once, and subsequently encountering many retellings in marketing contexts, how cake mixes and the like began to call for a superfluous egg because the extra effort lent a sense of legitimacy and accomplishment and appealed to bakers more so than the variety that did not.
Maybe the dining experience and our relationship with handed-down recipes are like that. I guess in that sense buying the experience, the virtual and vicarious reality, is what’s on offer and for myself, I’ll resort to processed foods, like boil-in-bag curries that allow me the pleasure of cooking rice to go with it or load-baring pizzas that I can flavor to taste, but I think I’ll not need a courier and a subscription.

To impart a bit of public luxury, the city of Paris is expanding its campaign of effervescent water (eau pรฉtillante) fountains and will soon be installing at least one public convenience in each of the twenty arrondissements.
Though more subdued and functional than the historic Wallace drinking fountains that are scattered throughout the City of Lights (so called for being the first metropolis to be illuminated by night) the new ones are a modern complement to those iconic symbols of Paris cast by sculptor Charles-Auguste Lebourg at the behest of the eponymous philanthropist, Sir Richard Wallace, to make these watering places to supplement the utilities destroyed by the Franco-Prussian War and make drinking water as safe a beverage of choice so people weren’t expected to repair to alcohol, like since the Dark Ages when booze was the only non-lethal thing to imbibe, a little carbonation goes a long way. Expatriate Wallace gladly credited France with all his good fortune and wanted to repay his adopted home with every honour but also was sort of a teetotaler. It is hoped that this nudge will reduce plastic bottle use plus the need to shuffle bottled water around the world. Despite the off-putting news recently that there was a trace of Legionnaires’ Disease causing bacteria in my apartment building’s plumbing but it was immediately redressed, I’d gladly too drink water from the tap, so long as it was sparkling.
